Enzyme modified cheese is produced from cheese using enzymatic processes. Most of the changes occur during cheese ripening are accelerated under controlled conditions. A strong and intense cheese flavour is developed in this process. Thermal processing used at the end of the enzymatic process allows deactivation of enzymes.
